  • 1 Tbsp olive oil

  • 3-4 garlic cloves (minced)

  • ½ yellow onion (diced)

  • 1 lb ground turkey

  • 2 Tbsp tomato paste

  • 2 ¾ cups chicken broth (approx. ¼ cup more if needed)

  • 1-2 tsp balsamic vinegar

  • 2 tsp Italian seasoning

  • 14.5 oz can crushed tomatoes

  • 8 oz uncooked pasta (we use medium shells)

  • ½ tsp each: salt and pepper

  • 2 large handfuls baby spinach

  • ½ cup grated parmesan
